CULN 1510 - Catering2 credit(s)
This course provides students with an understanding of catering concepts through demonstration and hands-on experience by completing various food functions. The course focuses on understanding the catering’s role within the hospitality industry and the various catering disciplines including topics such as contracts, checklists, legal considerations, staffing and training, food production, and sanitation. This course is project driven which requires significant hands-on participation. The events vary from black tie multi-course dinners for the community to BBQ lunches. Pre/Corequisite(s): CULN 2550 S 1 hour lecture / 2 hours laboratory
