An intermediate course beginning with tempering and handling covertures. Spraying, cutting, and molding chocolate, with a focus on producing chocolates in an elegant manner will be covered. Filled, molded, and liquored chocolates will also be introduced. Pre/Corequisite(s): CULN 2415 1 hour lecture / 2 hours laboratory
